Curly Escarole Salad




Curly Escarole Salad

This salad is great in the spring and summer when escarole, haricot vert, and tomatoes are young and vibrant.  This salad is inspired from spain.

Vinaigrette
Smoked paprika             2 teaspoon
Shallot, fine diced 1 small
Red wine vinegar 1 tablespoon
Dijon mustard 1 teaspoon
Salt  to taste
Pepper 3 cranks
Extra Virgin Olive Oil 3 tablespoons

For the Salad
Haricot vert (Green Beans)  1/4 pound
Cherry Tomatoes small handful
Curly Escarole  1 head
Almonds, chopped 1/4 cup
Manchego cheese 4 slices

Orange and Date Chicken

Orange and Date Chicken

cutting kumquats with a serrated knife seperating out seeds as you go.
 Kumquat and Date Sauce
This sauce goes with chicken, duck, and even fish.
It is better when it sits for two hours because the dates soften and thicken the sauce.  
Recipes are only a guide that need adjustment to your taste.
10 each Kumquats, sliced
5 dates, diced
1 shallot, minced
1 mandarin orange juiced
1 clove garlic, minced
1 sprig rosemary, chopped
2 tablespoons Extra virgin olive oil
mix in a bowl and let stand for 2 hours


Marinate Chicken Breasts and Sliced spring onions with 
mandarin orange juice
rosemary, chopped
garlic, chopped
olive oil
kosher salt
black pepper

Grill Chicken Breasts on medium high heat so you get nice color and texture.
